Healthy Comfort Food: Chicken Piccata w muschrooms, brussel sprouts, quinoa and brown Rice

I love one skillet dishes that are yummy, comfort food, filling, and on top of it...healthy indulgences!  You can use chicken or pork for this dish and the extra filling yummy healthiness comes from the quinoa and brown rice addition from Seeds of Change. Guarantee, even if you don't care about being healthy, you will make this dish again, and your tummies will be happy!

Serves two love birds or you and a bestie!

2- 5 oz chicken breast cutlets ( sliced into 1/2' thick strips if want to speed up cooking) 

1/2 tsp. kosher salt

1/2 tsp. black pepper

2 T unsalted butter

1 tsp. fresh garlic paste or crushed garlic. ( I will even do two as I love garlic but up to you).

4 oz fresh brussel sprouts split in to 1/2 and then 1/4 

1/2 cup chicken broth ( may need an extra 1/4 depending on thickness w rice)

1 T lemon juice (even better if you can squeeze in juice from a fresh lemon; I have fresh lemons in my back yard and this simple ingredient adds a burst of great flavor).

1 1/2 tsp. fresh capers

1 T fresh oregano

1 package of Quinoa and Brown rice w garlic from Seeds of Change 

Heat 1 T of butter in a large enough skillet to make your entire meal.  Add 1tsp. fresh garlic or garlic paste. once butter is hot enough add chicken cutlets sprinkled w 1/4 tsp salt and 1/4 tsp black pepper.  Saute and cook over medium heat till golden brown...about 4 minutes per side...8 minutes total. Once chicken appears cooked move chicken into a bowl you have on the side, keeping heat on skillet. 

Add another 1 T of butter to your skillet, and stir until melted.  Add mushrooms, and brussel sprouts. Cook for about 5 minutes w out heavy stirring and till sprouts are tender.

Add chicken stock, lemon juice, capers and 1/4 tsp. salt, and pepper under medium heat. bring to a simmer and once at a simmer heat for 1 minute.

Once veggies are done, add package of Quinoa and Brown Rice and stir till all is heated, about 2 minutes over medium heat. ( You may need to add more chicken broth depending on thickness. ) 

Once all is heated through, you can either add all the chicken on reserve into the mix and serve as a casserole or simply, plate the quinoa, brown rice and veggies and then top w the chicken mixture. Top with sprinkles of fresh oregano.
