Healthy and Comforting Cauliflower Mac and Cheese

2 cups of cooked small shell noodles, o noodles of your choice

1 cup of cauliflower bits

1 T butter

1 small shallot minced

1 tsp. garlic paste

1 cup of chicken stop

1 cup of milk

1/2 cup of low fat crème cheese

3/4 cup of shredded cheddar and jack cheese

salt and pepper to taste

Melt butter in saucepan, and saute 1 shallot till tender. add garlic paste and stir till smooth. 

add 1 cup of chicken broth and 1 cup of milk slowly to paste in pan and stir till blended; add crème cheese and stir till melted

add noodles and cauliflower mixture until covered in sauce. add 1/2 cup of cheddar and jack cheese mixture and stir till melted. salt and pepper to taste

pour into round small baking dish and cover w remaining cheddar and jack cheese. 

Bake at 325 for 25 minutes until cheese on top is melted and cauliflower is cooked through.

yummy, healthy, warm comfort food that is good for you. you won't even taste the cauliflower bits!
